An interview with Massimiliano Ceresini, Marketing & Customer Experience Manager, allows us to explore the commitment of Acetaia Giusti in preserving the rich heritage of Italy’s oldest family of vinegar makers.

Massimiliano, tell us something about the commitment of Acetaia Giusti to preserve the long tradition of high-quality Balsamic Vinegar of Modena?

For over 400 years we have been following the tradition of the Giusti family with passion, commitment and consistency, producing quality Balsamic Vinegar of Modena that derives from respect for the rules laid down by our ancestor Giuseppe Giusti in 1863: careful selection of raw materials, care for the barrels in which the product is aged (we also have barrels dating back to the 1700s and 1800s) and respect for the time needed for the product to mature its extraordinary organoleptic properties.

What variations of Balsamic Vinegar do you offer? Can you explain how ageing affects the flavour and properties of each variety?

Barrel ageing is a fundamental factor in defining the organoleptic properties of the product: the longer the liquid stays in contact with the barrel, the more it is contaminated in terms of aromas and fragrances. Furthermore, it is important to consider that the older the barrel, the more intense the aromas and character transmitted to the Balsamic Vinegar and that each wood can lend the product distinctive qualities: chestnut, rich in tannins, provides the classic brown colour; cherry sweetens the flavour; juniper gives the resinous essence, and oak the typical vanilla scent. For us, all these variables translate into a range with products that are also very different from one another: for example, there are five Balsamic Vinegars of Modena PGI in our most iconic collection, the Collezione Storica, that differ profoundly from one another because obtained using different recipes and ageing processes.

What recipe or use do you recommend bringing out the best in high-quality Balsamic Vinegar of Modena in recipes?

Balsamic Vinegar of Modena lends itself to a wide and varied use as it is ideal to complete a dish or turn it into something totally new and unexpected. Depending on the type, it may be perfect on a caprese, on raw vegetables, with fresh or mature cheeses, on stuffed pasta and risottos, on roast beef and boiled meats, but also on smoked salmon, on fresh fruit or as a garnish on desserts like ice cream or Panettone. We also propose it as an ingredient in mixology to create original and enveloping cocktails: the only limit is imagination and the desire to experiment…
