Another cheese to your taste can also be used, however one that melts when heated.
Instead of the truffle paste, you can replace it with a grating of fresh truffle.
In case you do not like the flavour of truffles or cannot find them, use some black olive pâté, or even very thinly sliced black olives.
Serve the bruschetta as an aperitif or starter, accompanying it with bruschetta with Romanesco cauliflower, anchovies and smoked provola and bruschetta with courgettes, cherry tomatoes and sausages.

Cut the bread into slices and toast them lightly.
Cut the taleggio cheese into slices about 5 mm thick and arrange them on the toasted bread.
Bake in the oven at 180° until the cheese melts.
Top with the black truffle paste.
