    Clean the earthy and fibrous part of the stem with a small knife.

    Do not throw away the scraps, they will be used to prepare a mushroom stock.

    Wash them quickly under running water, cleaning the soil residues with a toothbrush.

    Do not leave them to soak in water!

    Put them to dry on absorbent kitchen paper.
