Easy apple cake

A quick and easy homemade apple cake, a staple of a typical Italian breakfast, bringing childhood memories of scents and flavours

Method

    Peel the apples and cut them into 4 parts, then remove the core.
    Cut 8 of them into pieces of about 1.5 cm and the remaining 2 into thin slices, these will be used to cover the surface of the cake.
    Beat the eggs with the sugar, add the melted butter, flour and baking powder sifted together.
    Add the milk and salt and, once the mixture is smooth, add the apple pieces, stirring till well incorporated into the mixture.
    Pour the mixture into a baking tin covered with baking paper, spreading the surface well.
    Decorate with the apple slices and sprinkle with 2 tablespoons of sugar to help caramelise the cake.
    Bake in a preheated ventilated oven at 180° for about 45 minutes, use a toothpick to check that the cake is baked to perfection.
    Let cool and serve after dusting the surface with icing sugar.

10 golden apples
180 g flour
2 eggs
90 g sugar for the dough
2 tablespoons of sugar to sprinkle on the cake
100 g melted butter
1 sachet of chemical yeast
1 pinch of salt
100 ml milk
100 g icing sugar
