Mix the almond flour and the 00 flour in a bowl.
Add the sugar and knead the mixture with your hands briefly to amalgamate the ingredients.
Add the chopped butter and mix well.
Cut the vanilla pod, extract the seeds, and add them to the flour.
Grate the lemon peel into the bowl too, taking care not to also grate the bitter white part.
Lastly, add the egg, grappa, and cinnamon powder, and continue blending and kneading the mixture until obtaining a smooth dough.
Place the dough ball in plastic wrap and let it rest for at least 30 minutes.
Once the dough ball has rested, remove it from the foil and cut it into strips of about 3 cm.
Cut out small rectangles and round them into balls by kneading them with the palms of your hands.
Use a baking tray and cover it with baking paper.
Place the balls on it and bake them in a ventilated oven preheated to 180° for about 15 minutes.
The biscuits are ready when the base is golden brown.
Remove from the oven and let them cool before serving.
